We seem to be going in fits and starts on this blog at the moment....but I am going to try and get back into it again! So, thanks for sticking with us!
This weekend seems to have been all about muffins!! Mini Me has been bugging me for days to make a chocolate cake...and so last night after returning home late from my sister-in-laws (after an imprmptu BBQ due to the sun being out!) I gave in and said we could make chocolate muffins. Conversation went something like this....
Mini Me: "Can we make a BIG chocolate cake mummy"
Me: "Well if we make little ones we can share them out with your nursery class, but if we make one big one then we can't. Would you like to make SMALL ONES or a big one?"
Mini Me; "a BIG one!"
Me: "Are you sure"
Mini Me; "Erm.....ok, small ones!"
So, I grabbed my tried, tested and trusted edition of @eric_lanlard (Sexy Frenchman) "Home Bake" book (available from Amazon here.) and we decided to make "Double Chocolate Marshmallow Muffins" without the Mashmallow topping, as we didnt have any!
Recipe was easy to follow (as usual), and didn't have too many ingredients (as usual) & they turned out great. The thing i love about Eric (apart from him being a sexy frenchman, have i already mentioned that?) is that his recipes aren't too technical or difficult to follow but the flavours and results are ace!
We tried one (or maybe two), gave a couple out to our neighbours, and took the rest to Nursery this morning...
They went down well at Nursery, and when we got home tonight there was a knock at the door, and one of our lovely neighbours had come to give Mini Me this medal....
which says "No 1 Muffin Maker"......
He is one super proud little boy!! I am also so touched that my neighbour took the time to produce the "muffin maker" label and stuck it to the medal!! Happy days :-)
